I'm not very sure if I'm addicted to caffeine, or caffeine is addicted to me. All I need is a fresh brew in my Moka pot every morning, some milk and sugar before I can even attempt to start my day. After all, all you need is coffee.
So, naturally my next attempt was to create a very simple coffee pudding for me to binge on every evening.
Creamy, smooth, easy to make and with the caffeine kick I need everyday, this may just be the perfect pick me up or even just a dessert you make for family and friends.
More on the pudding:
Make sure your dry ingredients are appropriately mixed together before adding it to the milk.
Continuously and vigorously mix the milk with the powders so that you prevent any clumps from forming.
Make sure you've cooked the pudding enough before taking it off the heat, so you can cook through the cornstarch

So without further delay, please find below the actual recipe.
Chocolate Cheesecake
The Ingredients
25g Cornstarch
40g Sugar
1 pinch Cinnamon
1 pinch Salt
500g Milk
5g Vanilla
100 ml The Simple Brew Coffee Concentrate/ 1 tablespoon of instant coffee
Cocoa powder (optional)
The Directions
For the base:
Mix together cornstarch, cinnamon sugar and salt
To a saucepan add milk and gradually mix the above ingredients to it
Boil for around 2 minutes. Whisking constantly until it thickens.
Whisk in the coffee concentrate and vanilla while it cools
Transfer the pudding into bowls and chill for atleast two hours.
Sprinkle cocoa powder the pudding by using a sieve. Serve (or eat)!
