We freeze a lot of things in this kitchen. It has nothing to do with storage.
Freezing is where texture actually gets decided
When something like chocolate, ganache, or mousse sets, the fats inside it start forming crystals. How those crystals form — fast or slow, even or uneven — is what decides whether the final texture feels smooth or grainy. Freezing gives us control over that, in a way the fridge simply doesn't.

Crystal formation
Controlled temperature keeps fat crystals small and even, for a smoother, more consistent set.
Flavour
Flavour compounds change over time at room temperature. Freezing holds a product at its best for longer.
The return to temperature
Brought back slowly, texture reads cleaner and more refined than something simply pulled from the fridge.
None of this is about shelf life. It's a step we build in on purpose, the same way we'd control an oven temperature or a resting time — because the texture on the other side of it is different, and better.
